Hey there! See that awesome guy with the pearly white coat? That’s me, Chef Maury, and I write, cook, and craft everything you see on this blog. I’d like to welcome you to Casa Lago Tasting Room!
I am from Havana, Cuba and grew up in Miami, Fl., where I studied at Le Cordon Bleu Culinary Institute.
There I learned classical french cooking techniques, roasting, braising, sauté, sauces, butchery, etc. as well as gaining an understanding of food history. From Escoffier to Ferran Adria, and from Crepes Suzette to Mojito Foams and Garlic Ice Cream (really!).
This blog, and the food I write about come primarily from a love of food! It becomes a language and an experience that cannot be equaled in any other way; and every element of the eating experience: temperature, texture, taste, sight, smell, and touch work together to create a memory shared by those who participate in it. In one of our last popups, I served a Cream of Cauliflower, and hidden beneath the garnishes cauliflower chips, and chives, was a beet puree. As guests ate the soup, all on its own it started changing from a pearl white to a lovely pink color. This transformative surprise was shared by all the guests and you could hear the collective “ooooohhhhhh!” coming from the dining room. I still get positive emails about that dish.
The dishes published here are designed in mind for cooks at home. That’s where I cook. With the same tools and appliances. No restaurant equipment to be found anywhere in my kitchen! I’ve had to overstuff my fridge with all the components for dishes on popup nights, and play Tetris to pull out what I need without spilling everything else! If there are specific tools in the recipes that help get the dish done better, I always include a helpful link where to get them. As for the recipe measurements, they are largely set for 4 portions, unless otherwise noted; as intended for small, intimate dinners, with friends and family.

What better way to grab your attention! What better way to remember good times! Casa Lago Tasting Room is an experience that really does transport you away from the everyday. Although our pop-ups can happen anywhere, the initial and main location has a gorgeous lake overlooking a nature preserve with a specialized room dedicated to our tasting events. Come see why the long name lives up to the longevity!
Okay, so were you always awesome in the kitchen?
In the beginning, I did crack a few eggs and set a kitchen or two on fire – all part of the excitement. However, at Casa Lago Tasting Room its all about top notch service, quality, and innovation. I strive to make your experience memorable and filled with exciting new spins on a whole range of meals. So, sure why not, I was and always will be awesome in the kitchen! We’re still cracking eggs….
So why not get a job at a restaurant?
I have and in quite a few top places! Such at the Regent Bal Harbour, and high end catering for Celebrities. Each spot has been influential in my practice. However, the time came to create an experience for people that I felt could go beyond the kitchen and table.
